With its exotic taste that it owes to wakame and to the Asian dressing, this simple and healthy green cucumber salad will take you far away, to the land of Japan. Fresh and crunchy cucumber combined with sesame oil may be an enticing alternative to the traditional European cucumber salad. Sunomono can be enjoyed as an excellent addition to Asian dishes or as a healthy standalone snack.
• 2-3 tablespoonfuls dry wakame
• 1 large green cucumber
• salt for seasoning
• 3 tablespoons rice vinegar
• 2 tablespoonfuls dashi or water
• 1 tablespoonful sugar
• 1 tablespoonful soy sauce
• 1/2 tablespoonful sesame oil
• sesame seeds (white or black)
• fresh chilli pepper slices
Soak wakame in water for approx. 10 minutes. Drain to remove excess water. Wash the cucumber and peel with a vegetable peeler, leaving some of the peel on for an interesting visual effect. Cut the cucumber into fine slices with dark and bright peel parts. Put the cucumber slices in a bowl, sprinkle with salt and drain to remove excess water. Combine with wakame.
Mix dressing ingredients in a bowl – vinegar or water, sugar, soy sauce and sesame oil. Pour the sauce over the cucumbers with wakame. Leave in the fridge for a moment to cool. Sprinkle with sesame seeds and chilli before serving.
