OYAKODON - CHICKEN AND EGG SERVED ON RICE

The name of the dish comes from: oya – ‘parent’ + ko – ‘child’ + donburi. In this context, the egg is the child, the chicken is the parent and donburi is simply a term for a Japanese rice dish served in a bowl. Oyakodon is a one-pot meal. Its main ingredients are: onion, chicken, egg and a lot of umami. The dish is easy to prepare – it is simple and quick but also filling, a perfect way to improve your mood on cold winter days!

INGREDIENTS:

• 150 g sushi rice
• 300 ml water
• 1 large onion
• 100 ml dashi
• 3 teaspoonfuls soy sauce
• 2 tablespoonfuls sake
• 2 teaspoonfuls sugar
• 1 single chicken fillet
• 3 eggs
• parsley leaves

WAY OF PREPERATION:

Keep rinsing the rice until the water is no longer opaque. Put to a pot, add water and boil. Reduce the heat, put on a lid and cook for 10 to 15 min. Cut the onion into fine slices. Finely cube the chicken. Prepare the sauce: mix the stock, soy sauce, sake and sugar on the pan. Add onion and stew for another 5 minutes. Add chicken and stew until soft. When the dish is almost ready, add whisked eggs and stew it under lid on small heat, mixing from time to time. You will get moist and delicate scrambled eggs.

Spread the cooked rice on the plate and put the dish on top. Pour over with the sauce from the pan and sprinkle with fresh chopped parsley leaves.
